Air Fryer Potatoes

Description
Seasoned potatoes are a classic side dish, but Air Fryer Potatoes take them up a notch, cooking them faster and crispier, but also with less oil. Best potatoes ever? They’re definitely a contender!
Ingredients
- 1 pound Yukon gold potatoes scrubbed, cut into 3/4-inch chunks
- 1 tablespoon extra virgin olive oil
- 1 teaspoon paprika optional for color
- ½ teaspoon dried herbs Italian seasoning, rosemary, thyme, parsley, herbs de Provence all work
- ½ teaspoon garlic powder
- ½ teaspoon kosher salt plus a few pinches
- ¼ teaspoon ground black pepper
- OPTIONAL: Parmesan, chopped fresh parsley or chives
Directions
- Place the potatoes in a large bowl and top with the oil, paprika, dried herbs, garlic powder, salt, and black pepper. Toss to coat.
- Preheat your air fryer to 400°F. Add the potatoes to the basket and air fryer for 15 to 18 minutes, shaking the basket two to three times throughout, until the potatoes are a nice golden brown and fork tender (if you love extra crispy potatoes, cook 1 to 2 minutes more, until they are done to your liking).
- Transfer to a serving bowl or plate. Immediately top with a pinch of additional salt and Parmesan and chives (if using).
